01 / The promise

It is not simply a place to stay. It is not simply a restaurant.

You come to live
inside the story.

Sleep within ancient stone. Wake to the call of the roosters. Pick fruit from the tree and share a table with no neighbouring parties, no haste and no repetition.

Paliopyrgos is not for everyone. It is for those who recognise the value of the unrepeatable.

The family seal

Panoraia and Thanasis

Two people. Six children.
A place that never stopped remembering.

Before it became an experience, Paliopyrgos was everyday life: the hands of Panoraia and Thanasis, their six children, a table that grew to welcome them all, and land that never stopped giving.

This emblem is more than an ornament. It is the signature of a family that kept the stone alive—and now opens the door to its memories.

02 / A son of this land

Giannis Kapotas · son of Thanasis and Panoraia

The place that raised him
became his legacy.

Before he became a teacher, he was the boy who slept in a treehouse and woke to leaves whispering overhead. In harder times, he walked barefoot through the mud on his way to school. Paliopyrgos was more than the place where he grew up; it was the first world he learned to love.

One of Panoraia and Thanasis’s six children, Giannis became a worthy keeper of their story. When his parents were gone, the courtyard fell silent. Then his daughter Panoraia, with her husband Michalis and their son Giannis, brought the farm back to life. The Paliopyrgos Project was born from that return.

Some roots do not hold you back. They show you where to return.

Paliopyrgos remembers

Eight centuries
held in stone.

Built in the 13th century, Paliopyrgos has lived many lives. During the Ottoman period it became the residence of Aga Lele. In later years, those who cared for it kept it standing not as a monument, but as a home, a piece of land and a living memory.

In the family of Giannis Kapotas, the story carried on around the table, among the vines and in the cellar. From Thanasis and Panoraia to the present day, each generation has added a chapter without erasing the one before it.

The stone house within the farm

Where silence
speaks loudest.

At the heart of nowhere. Among olive trees, vines and untamed land. A house that does not separate you from nature; it returns you to it.

Stay within the land. Not beside it.

Sleep within the stone.
Wake within nature.

There is no alarm in the morning. You hear roosters, wind moving through leaves and a farm already awake. Open the windows: no city, traffic or noise—only the olive grove, the vineyard and an open horizon.

05 / The wine archive

Rare bottles · living vintages

Some years pass.
Others remain.

This is not a wine list. It is a family archive of bottles that have survived decades, journeys and generations. The historic collectible bottles are not available, served or offered to guests; they are sold only occasionally at auction.

The table belongs to you alone

Tonight, the restaurant
is yours alone.

Each evening, Paliopyrgos welcomes one party—and one party only. No other table. No other booking. Just the people you chose, the kitchen’s full attention and time allowed to unfold as it should.

A fifteen-course tasting menu tells the story of Greek cuisine through produce from the land, memories of family recipes and contemporary precision. Not as a performance. As a revelation.

With dinner, choose the estate’s house wine from the current vintage—white, rosé or red—at €80 per 500 ml. Historic collectible bottles are not offered at dinner and are sold only through occasional auctions.
